It’s no secret that Americans love beef. Per capita, Americans consume almost 60 pounds of beef yearly. It’s versatile, flavorful, and the right cuts can also be affordable. However, beef is high in saturated fat, on average 6 grams of fat per 4 ounce serving, Bison contains 3 grams of Saturated fat and fewer calories for the same serving size.

OTR Bison has all the versatility and flavor of beef with a fraction of the fat and less calories per serving. A 4 ounce serving of bison has only 3 grams of saturated fat. It also has many of the same cuts as beef!

Raised in central Oklahoma, OTR BISON are 100% pasture raised in a low stress environment on our ranch. They’re never in a feed lot and never fed a steady diet of grain to increase weight gain and fat content. We never expose OTR BISON to hormones to increase growth unnaturally, a common practice in the beef industry.

On The Hoof Bison

Many of our clients choose to purchase their “OTR BISON “on the hoof. This means that you pay for the whole animal while it’s alive based on its weight before butchering. This is an excellent way to save money, get the exact cuts you want, and always have high-quality, low-calorie red meat on hand for your family. If a whole animal is more than you would like we can pare you with another client that would like to purchase a half a Bison. It may take some time but we can accommodate you.

You can expect a processed Bison to yield about 300 to 400 pounds of meat Based on a live weight of 800 to 900 pounds, your yield will depend on the cuts you have processed. We deliver the bison to a local processor of your choice, and you work with them to decide the cuts you want. When they’re finished, you’ll pick up your meat and pay for the processing. Deliveries over 30 miles from our ranch will be charged extra. This option may be limited with a half bison purchase.

Packaged Bison

We have some of our bison processed to provide select cuts and sampler packs to our clients. They’re great if you’re looking to try bison out before buying a year’s worth. Our selection regularly changes, but we have bison ribeye, ground bison, and various bison roasts available. If you want to give “The Better Red Meat” a try, this is the way to do it.

Bison Cooking Tips

Bison and beef cows are both similar and share incredibly similar physiology. You’re able to get the same meat cuts from bison that you can get from a cow, plus a few more from the bison’s hump. Bison has a similar flavor to beef, though a little bit sweeter, and is also redder than most commercially available beef.

The big difference between bison and beef is the fat content. Bison is much leaner than beef. This makes it quite a bit healthier but also lowers cook times. You’re able to cook bison however you want, but you want to cook it a little bit less than you would the same cuts of beef so it doesn’t dry out.

You can expect bison to need about 33% less time cooking than a comparable beef cut. Cuts that require low and slow cooking methods, like the brisket, should be regularly monitored to ensure it doesn’t dry out.
